The
tart flavors in this recipe from Café Campesino staffer
Marsha Freed is the perfect accompaniment to a cup of
Ethiopian Yirgacheffe or Sidamo coffee.
Cut
together:
2
sticks margarine
2 c. flour
1/4 tsp. salt
1/2 c. sugar
Press
into a 9x12-inch greased pan. Bake at 325 degrees for 20
minutes.
Filling:
(mix together by hand)
4 eggs
2 c. sugar
7 T. lemon juice
4 T. flour
1/2 t. baking powder
Pour
filling over baked crust. Return to oven and bake 20
minutes more. Cool slightly. Sprinkle with powdered sugar.
