Herb Cookies
A
friend of our newsletter editor makes these to serve at
intermission at coffeehouse concerts at their UU church --
they are very spicy, not too sweet and simply delicious!
1/2
cup butter
1/2 cup sugar
1 egg
1/2 cup molasses
2 tsp baking soda
1/4 tsp salt
2 1/4 cups flour
1 tsp cinnamon
2 tsp crushed coriander seed
3 tsp ginger
1 tsp cloves
2 tbsp anise
1/3 cup hot brewed Café Campesino coffee
In
large bowl, cream butter and sugar together. Beat in egg.
Stir in molasses. In separate bowl, sift together
remaining ingredients. Add alternately with coffee to
creamed mixture. Drop onto greased cookie sheet. Bake at
350' for 8-10 minutes. Cool on rack. Makes 2 dozen
cookies.
